Watermelon and prawn cocktail

Prue’s Watermelon and Prawn Cocktail

Ingredients:

  • Half a small watermelon, scooped into round balls
  • 200g packet frozen cooked peeled prawns
  • Handful fresh mint leaves
  • 1 tablespoon light soy sauce
  • Freshly ground black pepper

Method:

  1. Keep a few mint leaves aside for decorating and mix all the other ingredients together in a bowl.
  2. Spoon into four big glasses and top with the mint leaves.
