Watermelon and prawn cocktail
Prue’s Watermelon and Prawn Cocktail

Ingredients:
- Half a small watermelon, scooped into round balls
- 200g packet frozen cooked peeled prawns
- Handful fresh mint leaves
- 1 tablespoon light soy sauce
- Freshly ground black pepper
Method:
- Keep a few mint leaves aside for decorating and mix all the other ingredients together in a bowl.
- Spoon into four big glasses and top with the mint leaves.
