Warm Chocolate Puddle Cakes with Lulu

Serves 4
Ingredients:
- Softened butter for greasing
- 1 tablespoons cocoa powder for dusting
- 85g plain dark chocolate, chopped
- 85g unsalted butter
- 1 medium egg
- 1 egg yolk
- 30 g caster sugar
- ½ teaspoon vanilla extract
- 1 tablespoon plain flour, sifted
- Vanilla ice cream, to serve
- Preheat the oven to 190°C I 400°F I gas mark 6.
- Butter 4 x I50ml | ¼ pint timbale moulds and dust with cocoa powder
- Put the chocolate into a bowl set over, not in, a saucepan of simmering water. When melted, stir in the butter. Remove from the heat when the butter has just melted
- Put the egg, egg yolk, sugar and vanilla into a large bowl and whisk until thick and mousse-like.
- Fold in the chocolate mixture and then the flour.
- Divide between the timbale moulds (the mixture will only fill them about half full), then place on a baking sheet and bake in the centre of the oven for 8-10 minutes. The surface should look cooked but should have a slight wobble.
- Turn on to individual plates and serve immediately with vanilla ice cream
