Warm Chocolate Puddle Cakes with Lulu

Serves 4

 

Ingredients:

  • Softened butter for greasing
  • 1 tablespoons cocoa powder for dusting
  • 85g plain dark chocolate, chopped
  • 85g  unsalted butter
  • 1 medium egg
  • 1 egg yolk
  • 30 g caster sugar
  • ½ teaspoon vanilla extract
  • 1 tablespoon plain flour, sifted
  • Vanilla ice cream, to serve
  1. Preheat the oven to 190°C I 400°F I gas mark 6.
  2. Butter 4 x I50ml | ¼ pint timbale moulds and dust with cocoa powder
  3. Put the chocolate into a bowl set over, not in, a saucepan of simmering water. When melted, stir in the butter. Remove from the heat when the butter has just melted
  4. Put the egg, egg yolk, sugar and vanilla into a large bowl and whisk until thick and mousse-like.
  5. Fold in the chocolate mixture and then the flour.
  6. Divide between the timbale moulds (the mixture will only fill them about half full), then place on a baking sheet and bake in the centre of the oven for 8-10 minutes. The surface should look cooked but should have a slight wobble.
  7. Turn on to individual plates and serve immediately with vanilla ice cream
