My Celebration Peach Bellini Cocktail

This recipe is a cross between a Bellini and a Champagne cocktail, and I think it’s better than either. Fresh peaches are unlikely to be around at Christmas but you can use tinned peaches – white ones are especially good.

Serves 6 in large Champagne glasses

Ingredients

3 ripe peaches peeled and stoned, or 1 tin of whole peaches in juice, not syrup

3tbsp brandy

A dash of Angostura Bitters

1 bottle Champagne or sparkling wine

 

Method

Whizz the peaches in a liquidiser (including the juice if using tinned peaches), along with the brandy and a dash of Angostura Bitters. Divide this between 6 glasses and chill well.

When ready to serve, top with the chilled fizz, give each glass a quick stir and enjoy!
