Meatless Sausage – Sandi Toksvig

Meatless Sausage 

Prep Time – 10 minutes

Cook Time – 8-10 minutes

Serves 2

 

Ingredients:

  • ¼ lb white fresh bread crumbs (113g)
  • 1 oz margarine (28g)
  • 2 tsp Flat leaf parsley, chopped
  • 1 ½ oz grated cheddar
  • ½ clove of garlic chopped fine
  • a small onion, finely diced
  • A little salt
  • 1 oz boiled macaroni or spaghetti
  • 1 egg, separated
  • A little Yorkshire relishMethod:
  1. Boil the Macaroni, chop fine
  2. Add to other ingredients with yolk of egg
  3. If not quite moist enough, add a little water that the macaroni was boiled in
  4. Shape into sausages, dip in white of egg.
  5. Roll in bread crumbs, and fry in usual manner
  6. Serve hot or cold
