Marbled Eggs

MARBLED EGGS

6 eggs, not too fresh (new laid ones are difficult to peel)

For the dye

6 tbs dark soy sauce

1/2 tsp salt

1 tbs sugar

2 1/2 cup water

2 x black (‘builder’s) tea bags

 

  1. Boil your eggs for 4.5 mins then place in an ice bath. Remove and carefully crack all over with the back of a spoon. Set aside.
  2. In a small saucepan, boil all the dye ingredients  together for 10 mins then allow to cool.
  3. Remove the tea bags then put the eggs in the dye for 24 hrs or up to 4 days, covered, in the fridge.
  4. When you are ready to eat the eggs, remove from fridge for 30 mins and then bring them to boiling point in the dye for 1 min then drain, peel and serve.
