Marbled Eggs
MARBLED EGGS
6 eggs, not too fresh (new laid ones are difficult to peel)
For the dye
6 tbs dark soy sauce
1/2 tsp salt
1 tbs sugar
2 1/2 cup water
2 x black (‘builder’s) tea bags
- Boil your eggs for 4.5 mins then place in an ice bath. Remove and carefully crack all over with the back of a spoon. Set aside.
- In a small saucepan, boil all the dye ingredients together for 10 mins then allow to cool.
- Remove the tea bags then put the eggs in the dye for 24 hrs or up to 4 days, covered, in the fridge.
- When you are ready to eat the eggs, remove from fridge for 30 mins and then bring them to boiling point in the dye for 1 min then drain, peel and serve.
