Henry Dimblebey’s Black Bean Shakshuka

Based on a recipe by Amelia Christie Mille 

Prep Time – 15 minutes

Cook Time – 45-50 minutes

Serves 4

 

Ingredients:

  • 1 Onion, chopped
  • 1 large Red pepper, sliced
  • Garlic – 4 cloves, crushed
  • Paprika, cumin, chilli flakes – a good teaspoon of the first two and a smaller one of the third
  • 1 can chopped tomato
  • Tomato puree- squidge
  • 1 jar of Queen black beans
  • 2 limes
  • 4 eggs

For The Topping

  • Feta – I pack, crumbled coarsely
  • 1 Avocado, sliced
  • A sprinkle pickled green chillies
  • Bunch Coriander, roughly chopped

To Serve:

  • Chilli sauce

Method:

  1. Soften onion, garlic and peppers in a shallow pan with a splash of water for 30 minutes, stirring occasionally.
  2. Add the spices
  3. Add the chopped tomatoes and puree. Simmer for 5 to 10
  4. Add the beans and re-heat. Squeeze in the lime juice. Flatten the mix.
  5. Carefully crack the eggs on top. Cover and simmer for 5 minutes or so until the egg whites are opaque and set.
  6. Sprinkle with the four toppings and serve with the chilli sauce
