Prue’s Tomato sauce – Salsa Pizzaiola

Prep Time – 10 mins

Cook Time – 1 hour

Ingredients:

  • 1 onion, chopped
  • 2 tbsp olive oil
  • 3-4 cloves garlic
  • 1kg/2 ½ lb canned chopped plum tomatoes
  • 2 tbsp tomato puree
  • 2 tsp sugar
  • Salt and freshly ground black pepper

 

Method:

  1. In a saucepan, sweat the onions in the oil until transparent
  2. Add the garlic and cook for 1 further minute, then stir in the plum tomatoes, with their liquid.
  3. Add the tomato puree and sugar. Season to taste with salt and pepper. Bring to a boil and then cook very gently for one hour.
  4. Check seasoning, sauce should be nice and thick, but you may wish to puree if you want a smoother consistency.
