Prue’s Tomato sauce – Salsa Pizzaiola

Cook Time – 1 hour
Ingredients:
- 1 onion, chopped
- 2 tbsp olive oil
- 3-4 cloves garlic
- 1kg/2 ½ lb canned chopped plum tomatoes
- 2 tbsp tomato puree
- 2 tsp sugar
- Salt and freshly ground black pepper
Method:
- In a saucepan, sweat the onions in the oil until transparent
- Add the garlic and cook for 1 further minute, then stir in the plum tomatoes, with their liquid.
- Add the tomato puree and sugar. Season to taste with salt and pepper. Bring to a boil and then cook very gently for one hour.
- Check seasoning, sauce should be nice and thick, but you may wish to puree if you want a smoother consistency.
