Melting Chocolate hack
Method 1:
break it up into a heat-proof bowl and set it over a pan of simmering water, making sure the bottom of the bowl is not touching the water. Stir gently as it melts.
Method 2:
Break chocolate up and place into a microwave-proof bowl and give it short (15-second) bursts, stirring between them
Ganache:
Stir 200g of chopped chocolate into 300ml of boiling double cream and melt together
Additional Notes
White chocolate melts more quickly than dark chocolate.
