Guacamole – Hack
Guacamole
Prep time: 10 minutes
Serves 4
Ingredients:
- 2 large ripe avocados
- 3 spring onions, finely chopped
- 2 medium tomatoes, seeded and diced
- 1 jalapeño pepper, seeded and finely chopped
- 10g coriander chopped
- 2 cloves garlic, crushed
- Juice of a lime
- Salt and black pepper
- Ready-made tortillas to serve
Method:
- Remove the stones from the avocadoes and dice them.
- Add the rest of the ingredients to the bowl and stir.
- Taste and adjust seasoning as needed.
I think the following three tricks are all you need to know about dealing with an avocado. My favourite three Avocado recipes follow.
Hack 1: Removing the stone from an avocado
Using a sharp knife slice the avocado lengthways through the skin and flesh until you hit the stone, then continue to cut all the way around the stone.
Twist the two halves of the avocado in opposite directions to separate them.
Remove the stone. You can do this by firmly whacking the wide end of the blade of a heavy chef’s knife to embed it in the stone, then twist. To get the stone off the knife, firmly knock the handle of the knife against the edge of the rubbish bin, with the stone over the bin. It will fall off into the bin. Scoop the avocado flesh from the skin with a large serving spoon.
HACK 2: Dicing avocado with a cooling rack
Put a cooling rack over a bowl. Place a halved avocado flesh-side down on the rack. Press the avocado through the rack into the bowl below. Slide the skin across the rack to scrape it cleanly.
HACK 3: Stopping avocado flesh from discolouring
When you have sliced or cubed the avocado flesh, put it into a sieve or a colander and rinse it briefly under cold water. This delays any discolouring for hours.
