Henry Dimblebey’s Black Bean Shakshuka
Based on a recipe by Amelia Christie Mille
Prep Time – 15 minutes
Cook Time – 45-50 minutes
Serves 4
Ingredients:
- 1 Onion, chopped
- 1 large Red pepper, sliced
- Garlic – 4 cloves, crushed
- Paprika, cumin, chilli flakes – a good teaspoon of the first two and a smaller one of the third
- 1 can chopped tomato
- Tomato puree- squidge
- 1 jar of Queen black beans
- 2 limes
- 4 eggs
For The Topping
- Feta – I pack, crumbled coarsely
- 1 Avocado, sliced
- A sprinkle pickled green chillies
- Bunch Coriander, roughly chopped
To Serve:
- Chilli sauce
Method:
- Soften onion, garlic and peppers in a shallow pan with a splash of water for 30 minutes, stirring occasionally.
- Add the spices
- Add the chopped tomatoes and puree. Simmer for 5 to 10
- Add the beans and re-heat. Squeeze in the lime juice. Flatten the mix.
- Carefully crack the eggs on top. Cover and simmer for 5 minutes or so until the egg whites are opaque and set.
- Sprinkle with the four toppings and serve with the chilli sauce
