Prue and John’s Goat’s cheese, thyme and honey on bloomer

Method:

 

  1. Mash the goat’s cheese.

 

  1. Brush the bread slices on both sides with the olive oil and then toast them, or brown them on both sides in a hot frying pan.

 

  1. When the toasts are cool, top them with the cheese.

 

  1. Sprinkle with sea salt and a few twists of the pepper mill. Drizzle a little honey over the top and sprinkle on the thyme leaves.

 

Additional notes

Tip – Any blue cheese will be good. I like a creamy, fairly mild Gorgonzola or Cotswold Blue, but if you like a sharper cheese, Roquefort or Stilton will fit the bill.
