Ingredients:
- Goat’s cheese
- 2 slices of white bloomer
- Olive oil for brushing
- Runny honey
- The Cotswold Guy Red Pepper Chutney
- 1 tsp thyme leaves, stalks removed
- Sea salt flakes and freshly ground black pepper
Method:
- Mash the goat’s cheese.
- Brush the bread slices on both sides with the olive oil and then toast them, or brown them on both sides in a hot frying pan.
- When the toasts are cool, top them with the cheese.
- Sprinkle with sea salt and a few twists of the pepper mill. Drizzle a little honey over the top and sprinkle on the thyme leaves.
Additional notes
Tip – Any blue cheese will be good. I like a creamy, fairly mild Gorgonzola or Cotswold Blue, but if you like a sharper cheese, Roquefort or Stilton will fit the bill.
