Meringue Drops

For the meringue drops

  1. Heat the oven to 120˚C/fan 100˚C/gas mark 1/2. Line a baking sheet with baking parchment.
  2. To make the meringue, whisk the egg white with the caster sugar in a clean bowl until it forms stiff, glossy peaks when the whisk is lifted. Making striped meringues by painting the inside of piping bag with gel food colouring. Transfer the meringue mixture into a piping bag fitted with a small round nozzle and pipe penny-sized drops of meringue onto the lined baking sheet, leaving room for them to expand in the oven. Bake in the oven for 1 hour, until the drops feel firm and dry, and lift easily off the parchment.
  3. Remove from the oven and allow to cool completely at room temperature, then store in an airtight container until you are ready to use them.
