Ellie Simmonds Chocolate Chip Banana Bread

INGREDIENTS
255ml natural yoghurt
1 tsp bicarbonate of soda
100g unsalted butter, melted and cooled
180g caster sugar
2 medium eggs
250g self raising flour
1 tsp ground cinnamon
250g mashed ripe banana (2–3 bananas)
60g dark chocolate chips
- Preheat your oven to 180 C. Grease and line two loaf tins (10 x 18cm). I only have a bigger loaf tin, so I always just make one big, delicious loaf of banana bread and cook it for a bit longer.
- In a large bowl, mix together the bicarb and yoghurt and set aside for about 5 minutes.
- Stir in the cooled melted butter, sugar and eggs.
- In another bowl, mix the flour and cinnamon together.
- Add the wet ingredients to the dry, folding gently.
- Add the mashed banana. Don’t overmix.
- Divide the batter between the two tins. Sprinkle them with the chocolate chips. Place in the oven and cook for 45-50 minutes. Test with a skewer, and when it comes out clean it is done.
